Keto minestrone
Ingredients
- 1 large onion, diced
- 3 fat gloves of garlic, cut in slices
- 250 gram bacon
- 1 fennel, diced
- 1 bell pepper, diced
- 2 large peppers, diced
- stem of broccoli. diced
- 100 grams green beans, sliced in three
- 4 spring onions, diced
- 2 carrots, diced
- 1 can of tomato, cut up
- 15 grams basil, torn up
- 15 grams of dille, diced
- chicken stock, 2 liters, you can use any type you like, i used cubes
Preparation
- Put the onions in a large pan with olive oil, add the bacon after a minute or so. Put the lid on the pan and let it bake for a couple of minutes
- Add the carrot, fennel, bell pepper, peppers, broccoli stem, green beans, spring onions and tomato, let it simmer for around 10 minutes
- Add the stock, let simmer for half an hour
- Add the basil and dill
- Ready to serve!
I put two servings in a jar with a top and set those in the fridge to keep it fresh. In the pan i left two servings for tomorrow.
